- Start by cooking the brown rice if you do not have it ready. You will need 3/4 cup cooked rice for this bowl. Follow the package instructions and set it aside when done.
- Toss the chicken pieces with BBQ sauce, salt, and pepper in a bowl. Let it sit for about 5 minutes to absorb the flavors.
- Heat a large skillet over medium-high heat and spray with oil. Add the chicken and cook for 8 to 10 minutes until cooked through and caramelized. Remove the chicken from the pan to rest.
- In the same skillet, add the bell peppers, corn, and red onion. Cook for about 5 minutes until the veggies are tender but still crisp. Season with salt and pepper.
- Return the chicken to the skillet. Stir everything together and heat for another 2 minutes to combine the flavors.
- Build your bowl by layering the rice, chicken and veggie mixture, cheese, and a drizzle of ranch dressing. Serve warm.
Notes
Marinate chicken for at least 5 minutes to boost flavor and juiciness. Use Greek yogurt-based ranch dressing to increase protein content. Store components separately for meal prep to avoid sogginess.
