Ingredients
  

  • 6 oz skinless, boneless chicken breast cut into bite-sized pieces
  • 2 tbsp BBQ sauce low-sugar preferred
  • 0.75 cup cooked brown rice
  • 0.5 cup black beans rinsed and drained
  • 0.25 cup shredded cheddar cheese
  • 2 tbsp ranch dressing or Greek yogurt-based ranch
  • Bell peppers sliced
  • Corn kernels fresh, canned, or frozen
  • Diced red onion
  • Salt and pepper to taste
  • Cooking oil spray

Method
 

  1. Start by cooking the brown rice if you do not have it ready. You will need 3/4 cup cooked rice for this bowl. Follow the package instructions and set it aside when done.
  2. Toss the chicken pieces with BBQ sauce, salt, and pepper in a bowl. Let it sit for about 5 minutes to absorb the flavors.
  3. Heat a large skillet over medium-high heat and spray with oil. Add the chicken and cook for 8 to 10 minutes until cooked through and caramelized. Remove the chicken from the pan to rest.
  4. In the same skillet, add the bell peppers, corn, and red onion. Cook for about 5 minutes until the veggies are tender but still crisp. Season with salt and pepper.
  5. Return the chicken to the skillet. Stir everything together and heat for another 2 minutes to combine the flavors.
  6. Build your bowl by layering the rice, chicken and veggie mixture, cheese, and a drizzle of ranch dressing. Serve warm.

Notes

Marinate chicken for at least 5 minutes to boost flavor and juiciness. Use Greek yogurt-based ranch dressing to increase protein content. Store components separately for meal prep to avoid sogginess.
