Cheesy Meatball Subs

Homemade meatballs baked in marinara sauce and topped with melted mozzarella on toasted hoagie rolls.

Ingredients
  

  • 1 lb ground beef I recommend 80/20 for juiciness
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic minced
  • 1 egg
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 8 oz shredded mozzarella cheese
  • 4 hoagie rolls
  • Olive oil for toasting

Equipment

  • Baking sheet
  • Mixing bowl
  • Saucepan

Method
 

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, parsley, garlic, egg, salt, and pepper. Mix until combined and form into meatballs.
  3. Place meatballs on the baking sheet and bake for 20 to 25 minutes or until cooked through.
  4. Heat marinara sauce in a saucepan over medium heat. Add cooked meatballs to the sauce and simmer.
  5. Slice hoagie rolls and brush insides with olive oil. Fill with meatballs and sauce, top with cheese, and broil for 2 to 3 minutes until melted.

Notes

I recommend toasting the rolls well to prevent sogginess.
