Method
- Preheat the oven to 425°F (220°C).
- If chicken breasts are thick, pound them to an even thickness. Season both sides with salt and pepper.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and half of the grated Parmesan cheese.
- Dip each chicken breast in flour, then egg, and finally the breadcrumb mixture, coating evenly.
- Heat olive oil in a large skillet over medium-high heat.
- Cook the breaded chicken for 3 to 4 minutes on each side until golden brown.
- Spread a thin layer of tomato sauce in a baking dish.
- Place the browned chicken breasts in the baking dish.
- Top each chicken breast with remaining tomato sauce and shredded mozzarella cheese.
- Bake for 15 to 20 minutes until the cheese is melted and bubbly.
- Remove from oven, sprinkle with minced garlic, chopped basil, and remaining Parmesan cheese. Serve hot.
Notes
To keep the breading crispy, avoid letting the chicken sit in the sauce too long before serving.
