Ingredients
  

  • 1 pound gnocchi shelf-stable works best
  • 2 tablespoons olive oil
  • 4 cups fresh spinach about 120g
  • 4 ounces feta cheese, crumbled about 115g
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon red pepper flakes optional

Equipment

  • Large frying pan
  • Pot for boiling water
  • Slotted spoon

Method
 

  1. Boil salted water. Cook gnocchi until they float, about 2 minutes. Drain well.
  2. Heat olive oil in a large pan over medium-high heat. Add gnocchi in a single layer. Let sit 2 to 3 minutes to form a golden crust.
  3. Stir gently and cook 2 more minutes until crispy. Avoid overcrowding or they will steam.
  4. Lower heat to medium. Add garlic and cook 1 minute. Toss in spinach until wilted.
  5. Season with salt, pepper, and red pepper flakes. Remove from heat, fold in feta, and serve.

Notes

Serve with crusty bread or a simple side salad. Store leftovers in an airtight container in the fridge for up to two days and reheat in a skillet.
