Method
- Boil salted water. Cook gnocchi until they float, about 2 minutes. Drain well.
- Heat olive oil in a large pan over medium-high heat. Add gnocchi in a single layer. Let sit 2 to 3 minutes to form a golden crust.
- Stir gently and cook 2 more minutes until crispy. Avoid overcrowding or they will steam.
- Lower heat to medium. Add garlic and cook 1 minute. Toss in spinach until wilted.
- Season with salt, pepper, and red pepper flakes. Remove from heat, fold in feta, and serve.
Notes
Serve with crusty bread or a simple side salad. Store leftovers in an airtight container in the fridge for up to two days and reheat in a skillet.
