Method
- Add warm water to a large bowl or stand mixer. The temperature should feel like nice bath water.
- Add yeast and sugar to the water. Wait about 3 minutes until you see bubbles forming and it looks slightly foamy. If no change happens, discard and start over.
- Add kosher salt, olive oil, and 3 and 3/4 cups of flour, 1 cup at a time.
- Once all flour is incorporated, knead for 5 minutes using a mixer or 7 minutes by hand. The dough should be smooth, elastic, slightly sticky, and soft. Add a bit more flour if it sticks to the bowl.
- Shape the dough into a ball and place it in a large greased bowl, turning it once so the top is greased. Spray the top with nonstick spray.
- Cover the bowl with a towel and let rise in a warm place for 20 minutes up to 8 hours.
- Punch down the dough and separate it into two balls. Let rest for 5 to 20 minutes before rolling out, topping, and baking.
Notes
Letting the dough rise longer will develop more flavor. You can freeze unused dough balls in ziplock bags for up to 3 months.
