Leftover Hot Dog Pizza with Caramelized Onions

A smart way to use up leftover hot dogs. This crispy pizza is loaded with mustard, BBQ sauce, American cheese, caramelized onions, and melted mozzarella on a par-baked crust and ready in about 22 minutes.

Ingredients
  

  • 1 tbsp olive oil for caramelizing the onions
  • 0.5 cup onion chopped
  • 1 medium pizza crust store-bought refrigerated dough recommended
  • 1 tbsp olive oil for brushing the dough
  • 2 tbsp yellow mustard
  • 2 tbsp BBQ sauce ketchup works as a substitute
  • 9 thin slices American cheese
  • 2 hot dogs chopped, leftover grilled or uncooked both work
  • 0.75 cup shredded mozzarella cheese
  • sauerkraut optional, squeeze very dry before adding

  • Pizza peel or flat-edged baking sheet

Method
 

  1. Preheat your oven to 450 degrees F. If using a pizza stone, place it in the oven now so it heats up fully before the dough goes in.
  2. Heat a frying pan over medium heat. Add 1 tablespoon of olive oil, then add the chopped onions. Stir occasionally and cook for 10 to 15 minutes until deep golden brown and caramelized. Do not rush on high heat.
  3. Lay a sheet of parchment paper on a flat surface and dust lightly with flour. Roll out pizza dough into a 13 to 14 inch circle and use your fingers to build up the edges slightly for a crust border.
  4. Drizzle 1 tablespoon of olive oil over the entire surface of the dough. Use a brush or fingers to spread it to the edges, especially the crust border.
  5. Slide the parchment with the dough into the oven and par-bake for exactly 1 minute at 450 degrees F. Remove from oven immediately.
  6. Spread mustard and BBQ sauce evenly over the crust using the back of a spoon. Layer on American cheese slices, then chopped hot dogs, caramelized onions, and sprinkle mozzarella over the top. Add sauerkraut now if using.
  7. Return the pizza to the oven and bake for 10 to 12 minutes until the cheese is bubbly with golden brown spots and the crust edges are deep golden. Rest for 2 minutes before slicing.

Notes

Par-baking the crust for 1 minute is essential to avoid a soggy base. Squeeze sauerkraut very dry before adding. Leftover brats or grilled sausages are great substitutes for hot dogs. Reheat leftover slices in a toaster oven at 375 degrees F for 5 to 7 minutes for best results.
