Ingredients
  

  • 2 cups cooked shredded chicken rotisserie chicken works great
  • 1 cup queso cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 8 medium flour tortillas 6-inch size
  • 1 cup red enchilada sauce
  • 1 cup shredded cheddar cheese

  • Baking dish

Method
 

  1. Preheat oven to 375°F.
  2. Mix shredded chicken, queso cheese, sour cream, and green onions in a bowl.
  3. Spread 1/4 cup enchilada sauce in a baking dish.
  4. Fill each tortilla with the chicken mixture and roll tightly.
  5. Place rolled tortillas seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the top.
  7. Sprinkle with cheddar cheese.
  8. Bake for 20 minutes until cheese is melted.

Notes

Let rest 5 minutes before serving. Add jalapeños for extra spice.
