Method
- Preheat oven to 375°F.
- Mix shredded chicken, queso cheese, sour cream, and green onions in a bowl.
- Spread 1/4 cup enchilada sauce in a baking dish.
- Fill each tortilla with the chicken mixture and roll tightly.
- Place rolled tortillas seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top.
- Sprinkle with cheddar cheese.
- Bake for 20 minutes until cheese is melted.
Notes
Let rest 5 minutes before serving. Add jalapeños for extra spice.
